Green Tomato Pie (September 1932: Grace Bellanca)
Wash and slice 3 cups of green tomatoes, mix together 1 and 1/2 cups of granulated sugar, 1/4 teaspoon of salt, 5 teaspoons of grated lemon rind, 1/4 tsp. cinnamon.
Arrange tomatoes in layers in pastry-lined pan, sprinkling each layer with sugar mixture. Then add 5 teaspoons of lemon juice: 2 tablespoons of butter.
Cover with top crust and bake for 34-40 minutes.
